MODERN VIETNAMESE BANQUET Cost: $119.95 Saturday 12 May 11-1:30pm Famous for its lively, fresh flavours and artfully composed meals, Vietnamese food and cooking is the true 'light cuisine' of Asia. Abundant fresh herbs and greens, delicate soups and stir-fries, and well-seasoned grilled foods served on, or with, rice or noodles are the mainstays of the Vietnamese delicacies. Even the beloved sweets for snacks or desserts are often based on fresh fruits served with sweetened rice or tapioca. Rarely does any dish have added fats. While the Vietnamese cuisine relies on fresh vegetables, subtle seasonings and rice, Vietnamese cooking also reflects its Chinese and French influences. Using readily available ingredients combining to give that unique hot-sour-sweet combination. Dishes we cook can be eaten on their own or combined to create a banquet-style feast. Chef: Tony Ching
AMATEUR CHEF SCHOOL - COURSE 2 Cost: $799.95 Thursday 24 May-Thursday 12 July 6-9pm The Amateur Chef School Course will be held at Learn Cook Dine, Loganholme, one Thursday evening per week. Each course will be made up of 8 classes in total. The classes will be 3 hours in duration and be a combination of teacher demonstration and student participation. The course is open to a maximum of 12 students. In order for the students to complete their Amateur Chef School Course they must complete the full course and have completed course 1 of the Amateur Chef School. MEXICAN CANTINA – AREBA! Cost: $119.95 Saturday 26 May 11-1:30pm Alison will turn Learn Cook Dine into a 'Mexican Cantina' and share with you her favourite Mexican recipes. It wouldn't be a 'Mexican Cantina' without some Tequila would it! Indulge in a traditional Mexican drink the 'Margarita' to start you off and put you in the mood. Then learn some of Alison's favourite Mexican food. You will experience a to die for Chicken Mole with bitter sweet chocolate, old favourites like Fajitas, Enchiladas, Quesadillas and of course it wouldn't be Mexican without some Chilli Con Carne around would it? We are not serving this old favourite with rice though, how about some warm tortillas and a spicy homemade salsa. You will also be making guacamole the old fashion way with a pestle and mortar!
